Greek Lemon Chicken and Potatoes

The recipe made a ton! Really good, probably would add more lemon next time. ( I like things super lemony!)

I like the Greek combination of lemon and herbs, and I’ve loved making lemon potatoes before. This seemed like a no brainer to toss chicken in with the potatoes and let it all cook together.

The recipe I followed called for 4 pounds of thighs, and said it was 4 servings, which was way too much, in my opinion. Approximately 4 pounds was 13 thighs, I buy the packets of thighs from Costco, so sometimes there’s an odd number. I usually serve two thighs as an entree, depending on their size.

I’ve modified the recipe a little after making it, to reflect what I’d do next time.
