Cheesy Chicken Enchiladas

Trying out Blue Apron! Glenn’s sister gifted us a week, this is Cheesy Chicken Enchiladas.

I really liked the filling, but it was hard to roll them and keep them in the pan. It was also a lot of food! Not complaining really, but this was probably easily 3 portions, instead of the 2 it says.  The black beans were a nice difference to add into an enchilada.

I didn’t miss the sauce that they’re normally swimming in. The tomatillo sauce was tangy and a nice twist having it warm. I’ve had warm salsa verde before, but this was a thicker, chunkier version.
