This year for Christmas, one of the coolest presents I got was a new Shun knife! It’s a 5.5″ Nakiri with a hammered finish. I remember watching Chef Morimoto using a nakiri on the original Iron Chef tv show, and making beautiful thin ribbons of daikon radish and other vegetables. I can’t wait to try this beauty out, and sometimes I just take it out of the knife block just to look at it. I love the combination of the hammered section and the Damascus steel!
