While visiting a local Mexican market with my friend, I bought some long cut beef short ribs to toss on the smoker. I haven’t seen them in this size at the grocery stores, so I consider this a good find. On the barbeque competitions I’ve been watching, they prefer short ribs to the back ribs, since they’re significantly meatier.
The beef was meltingly good and came off the bone easily. I used some Sweet Baby Ray’s sauce on these, but they’d have been just as good without any sauce at all.
