After watching the Kingsford Championships on tv, I’ve decided to try some of the methods that the competitors were using for their BBQ. DivaQ BBQ uses pans with her chicken, so I bought some new heavy duty Weber foil pans and decided to give it a try.
I also wanted to see how much smoke flavor I could get in the red potatoes, so I tossed some in there as well. Quartered and tossed with some olive oil, pepper and Hatch chile seasoning.
The last round of smoking pork belly ended up with dried out belly, so this time I’m smoking them for less time, and keeping an eye on it.
