After a while of use, I like to sand down and refinish my chopping blocks in order to keep the beeswax seal thick and rehydrate the wood. I have a maple Boos Block with a cutout tray for scraps that I’ve had for years now, and really enjoy working with it. It’s 2″ thick and heavy enough to keep it’s place through even vigorous chopping. I use a beeswax / mineral oil finishing polish that’s food safe and helps keep my board clean. Beeswax has natural antibacterial properties.
