Did you know that selecting a proper cook’s knife is one of the most important things you will do as a chef? It will help you through your learning process, and will give you a feeling of superhuman power as you go through your prep work.
Slicing onions, chopping meat, everything feels elevated when you have your chef’s knife in hand. It cuts through every ingredient like butter. It gives you a feeling that you can do anything you want to do in the kitchen.
I prefer Wusthof Classic. Everyone says “oh chef’s knives are so much money!” Think about it like this, you should be able to use the same quality chef’s knife for over 30 years. Amortize a $150-$200 knife over 30 years alone, and you’re looking at the cost of a Starbuck’s latte per year.
Wusthof Classic has a beautiful balance to their knives. If you think all knives are the same, I’d challenge you to try different lines of the same brand. I cannot stand Wusthof Gourmet. It makes me itch to hold one of those knives.
I think my main purpose in this post is that I think everyone needs to feel the knife, and decide on which one works for them. Then BUY that knife. If you’re unsure about cooking, or if you’re seasoned, and looking for a new knife, you will be 3x the chef you might have been, because you’re working with a tool that enhances your cooking.
